Drea's Instant Pot Greens

When it comes to time, I don't have much. Let's call me a lazy cook some days. I wanted some collard greens one day and the thought of slaving over a hot stove had me in a "miss me" mode.


Then, I thought about it. What's the point of having an Instant Pot if I don't use it? Let me create some Southern collard greens. I found recipes online and it was fine but not a true Southern Louisiana girl collard greens. Friends have been asking and now I'm writing it down in time for Thanksgiving.


Save yourself time and use those airfryers and Instant Pots. I'm a household of one so I use the mini versions.


First things first, your ingredients.


Collard Greens (again, I'm lazy so I grab a bag of cut up collards from H-E-B. I do wash them again because of trust issues).


Chicken broth (I create like a vegetarian style for my greens because there is no pork in mine. Keep reading though...I still bring the flavor).


Minced Garlic - you can use real garlic but again, I'm lazy.

Minced Onions - read above

Smoked Salt - hard to find but you can find it in Brookshires or Amazon. I use an Applewood Smoked Salt.


Turn your Instant Pot on to saute. Pour the chicken broth into it. You can start with 1 cup of chicken broth. Add some water to eliminate it from being too salty. Do not overfill your Instant Pot. Season the chicken broth to your liking. Saute for 10 minutes. This is how your greens will taste so season it well. Once you have the broth seasoned to your liking with the garlic, onions, red pepper flakes, paprika, salt, and liquid smoke, you can put your washed greens into the pot.


Stir the greens into the pot. Add the lid and turn the cooking setting to Pressure for 40 minutes. After the greens have cooked, release the steam. Taste your greens. If you feel you need more time, add 15-20 minutes to the pressure cooker and cook some more.
